Oatmeal Applesauce Cookies


These cookies are my husband's all time favorite, I got the recipe from his Mom when we got married and they are now one of my new favorites.  You can't feel to bad about making cookies when they have 2 cups of applesauce and oatmeal, but they are still yummy.

Oatmeal Applesauce Cookies

                                                                        2 cups sugar
1 cup shortening
2 eggs
2 cups applesauce
2 tsp soda
3 3/4 cups flour
1 tsp salt
1/2 tsp nutmeg
2 tsp cinnamon
2 cups oatmeal
chocolate chips

Cream shortening and sugar together, add eggs and mix well.  Mix together applesauce and soda and add to creamed mixture.  Add flour, salt, nutmeg, cinnamon and mix well, then add oatmeal and chocolate chips.

Bake at 400 for 10 to 12 min.

Of course you could make these more healthy by eliminating some sugar and the chocolate chips and maybe even some nutmeg if you're not a big fan like me.
