Skinny Blueberry Muffins

We have been trying to eat a little healthier around here lately. In my search for a healthy muffin recipe I stumbled upon this recipe from Simply Kierste and substituted the sugar with honey and used whole wheat flour and they were really yummy.

My kids even ate them...and that's sayin somethin!

Skinny Blueberry Muffins

3/4 cup Whole Wheat Flour
1/4 cup White Flour
1 Tsp Baking Soda
1 Tsp Baking Powder
1/4 Tsp Salt

 6 oz container Vanilla Yogurt
1/3 cup Honey
1/4 cup Egg Whites
2 Tbs Oil
1/4 cup Skim Milk
3/4 Tsp Vanilla

3/4 cup Blue Berries (Fresh or Frozen)
1/2 cup Chocolate Chips

Instructions
  1. Heat oven to 400 degrees. Line a 12 cup muffin tin with liners and set aside.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt; mix well. In small bowl combine oil, egg whites, milk, yogurt, and vanilla; mix well. Add yogurt mixture to flour mixture. Stir just until moistened. Gently stir in blue berries and  chocolate chips.
  3. Divide batter equally into muffin cups. Sprinkle with sugar(opt). Bake for 15-18 minutes, or until toothpick inserted into center of muffin comes out clean.
