Ensalada Chilena

My husband spent two years before we were married in Chile on a mission for our church, if you're interested in learning more about our church check out there website  He fell in love with the food while he was there and this salad is one of his favorites when we have fresh garden tomatoes. 

I don't even like eating raw onion but for some reason it works in this combo. It is very simple and surprisingly really yummy!  

 1/4 sweet onion diced
4 lrg fresh tomatoes diced
3 tbs canola or vegetable oil
1 diced avocado (opt.)
salt to taste

Combine all ingredients and mix well.  Eat on top of sliced french bread or dip bread into juice.  We usually just buy ours but if you want more of an authentic bread check out this recipe for Marraqueta.  You can find the recipe here.
